RICE SALAD PROVENCAL image

2 cups texmati, basmati or long grain rice
2/3 cup olive oil
1/3 cup lemon juice
1/2 tsp. salt
pepper
1/2 cup parsley-chopped
1/2 cup celery -chopped
1/2 cup red onion-chopped
1 7 ounce jar roasted peppers-drained and chopped
1/4 cup pitted brine cured olives
1 tbs. capers
2 hard cooked eggs.

Steps:

  • Cook rice according to directions Cool to room temperature Whisk oil, lemon juice, salt and pepper Combine rice, parsley, celery, and onion, roasted peppers, olives and capers. Add dressing. Toss to combine Garnish with egg slices
