This is my Mom's spinach salad recipe that we grew up with and it's always been a favorite of anyone that's tried it. I believe Mom cut the recipe from the newspaper. Prep time is approximate (I like to tear the stems off the spinach so that takes a few more minutes, your choice), and the cooking time is for the hard boiled eggs. This is very good the next day (spinach kind of wilts in the dressing). I hope you like it as much as we do!

Steps:
- Combine celery, onion, 3 chopped eggs, cheese & spinach.
- Combine salt, pepper, Tabasco, vinegar, horseradish & mayonnaise.
- Mix dressing with vegetables.
- Put in serving dish, garnish with reserved grated hard boiled egg & sprinkle with paprika.
- Chill.
