MOM'S SHORTBREAD COOKIES image

1 cup confectioner's sugar
4 cups flour
1 lb butter - refrigerated temperature

Steps:

  • In a large bowl, mix flour and sugar using wisk. Cut-up each stick of butter into tablespoons than cut into halves. Distribute over flour and sugar mixture. Using pastry blender or your hands work the butter into the dry ingredients until it can be shaped into a ball. Using your hands will make the dough soft and more difficult to work with. Wrap each ball in plastic and cool for 30 minutes. Roll using plastic wrap to avoid using more flour. Cut-out cookies and place on sheet 1" apart. Bake at 325 for 20 minutes or until golden brown. The cookies will brown quickly at the end.
