Mom's Rice Pudding image

This is my mom's rice pudding recipe. It is perfect and amazing (when she makes it). Although I have been able to make most of her recipes, this one eludes me. I have yet to make it as good as she does. This is why I don't have a picture of it-YET.

Number Of Ingredients 9

1 quart(s) whole milk
1 quart(s) water
1 1/3 cup(s) carolina rice
1 1/3 cup(s) sugar
2 egg yolks
1 tablespoon(s) vanilla
1/2 pint(s) light cream
1 1/2 cup(s) raisins (optional)
cinnamon for sprinkling (optional)

Steps:

  • Mix milk, water, rice, and sugar in a saucepan over medium heat for 45 minutes, stirring constantly.
  • Add raisins (if applicable) and continue to cook for 15 minutes more.
  • Remove from heat
  • In a separate bowl, mix egg yolks, vanilla, and cream
  • Pour egg mixture into pudding pan
  • Pour mixture into a bowl and allow to cool at room temperature for about 30 minutes, until a crust forms on top
  • Sprinkle with cinnamon (optional), cover, and refrigerate
