MOM'S RICE PUDDING image

Number Of Ingredients 10

3/4 cup sugar
2 Tbsp cornstarch
1/4 tsp salt
2 1/2 cups milk
1 egg, slightly beaten
1/4-1/2 cup raisins
2 Tbsp butter
1 tsp vanilla
1/2 tsp cinnamon
2 cups cooked white rice

Steps:

  • 1. In 8 cup pyrex, blend together sugar, cornstarch and salt. Gradually stir in milk, mixing well. Microwave on high 10-12 minutes, stirring every 3 minutes, until mixture is smooth, thickened and clear. 2. Stir a small amount of hot pudding quickly into egg to temper. Return egg mixture to hot pudding, mixing well. Stir in raisins. Microwave on medium high 1-3 minutes, until smooth and thickened. 3. Add butter, vanilla and cinnamon. Stir until butter is melted. Stir in rice and mix well. Refrigerate until set.
