Mom used to make this rice and I have no idea of the origin of the recipe. It is very similar to the Mushroom Rice Casserole except this has green peppers and no mushrooms.

Steps:
- Preheat oven to 350.
- In a large skillet or pan, saute onion and green pepper in oil.
- Add mushroom soup and heat.
- Stir in rice and beef consomme.
- Pour into a greased casserole dish.
- Bake uncovered 1 hour stirring a couple of times.
