MOM'S FRIED CHICKEN image

1 3-lb. fryer
1 tbsp. salt
1 tbsp. black pepper
2 eggs (beaten)
1/2 cup water
2 cups flour
1/2 cup butter flavored Crisco.
1 Stick (1/2 cup) butter

Steps:

  • Cut chicken in eight pieces. Season well with salt and pepper. Set aside. Mix eggs, and water. Submerge chicken pieces in egg mixture. Let sit for 5 minutes. Put flour in a large bowl. Place chicken pieces in bowl with flour mixture & coat well. Melt butter and Crisco in a large frying pan over medium heat (about 350°F.) Place chicken in pan. Fry, turning as chicken browns. Heavy parts such as breast, thighs, and legs will take 15 to 20 minutes, wings about 10 to 15 minutes. Drain chicken on paper towels. Can keep warm in preheated oven (350 degrees).
