I'm not sure where my mother got this recipe but it has quickly become a requested item. The flavor of the squash comes through nicely and the sausage adds just the right touch. Creamy layer is your standard creamed soups mixture w/sour cream...but its the seasoned bread crumbs on top that provides the perfect crunch to...

Number Of Ingredients 10

8 yellow and green zuccini
1 lb sausage
1 c onion, minced
1 can(s) creamed corn
1 can(s) cream of chicken soup
1 can(s) cream of mushroom soup
8 oz sour cream
1 box stove top stuffing
1 stick butter
black pepper to taste

Steps:

  • 1. Brown sausage and onion.
  • 2. Pre-cook/saute squash.
  • 3. Combine soups and sour cream.
  • 4. Layer in a buttered 3 quart casserole dish.
  • 5. Top with stove top stuffing crumbs. Dot the top with butter.
  • 6. Bake at 350 degree oven for 30-35 min.
