Mom's best carrot cake image

So easy to make, yet so delicious. My mom would make this for my brother's birthday, and it was always gobbled up fast.

2 cup(s) sugar
1-1/2 cup(s) oil, i used canola oil
4 large eggs
2 teaspoon(s) baking soda
2 cup(s) all purpose flour
2 teaspoon(s) cinnamon
1 cup(s) sweetened, flaked coconut
3 cup(s) grated carrots
1 cup(s) chopped walnuts
1 - 8 oz pkg reduced-fat cream cheese, softened
2 stick(s) butter, softened
1 teaspoon(s) vanilla
4 cup(s) powdered sugar

Steps:

  • Heat oven to 350. Spray 2 8 or 9" cake pans w/ cooking spray. In lg bowl, beat sugar, oil, eggs, baking soda, flour, cinnamon, coconut, carrots and walnuts until combined.
  • pour batter evenly into pans. Bake 45-50 mins, or until a toothpick inserted in center comes out clean. Let cool.
  • In another lg bowl, beat cream cheese and butter until smooth. Beat in vanilla. Gradually add powdered sugar until combined. frost cake.
