Mom's Apple Cake image

Number Of Ingredients 9

4 cups peeled, cored & diced apples
2 eggs
2 cups sugar
2 tsp cinnamon
1/2 cup oil
2 cups flour
1 tsp salt
1 tsp baking soda
3/4 cup chopped walnuts (optional)

Steps:

  • Preheat oven to 350°F. Mix apples and eggs together well. Add sugar, cinnamon, oil and mix well. Add flour, salt, baking soda (& walnuts) and mix well.
  • Butter the bottom of a 9x13 loaf (or Bundt) pan and pour in the batter.
  • Bake for approx 1 hour. Check the center with a toothpick near the end. If it begins to burn on top, cover it loosely with foil.
