Time 25m

Number Of Ingredients 9

1/4 c olive oil
8 clove garlic, very thinly sliced
3/4 c sour orange juice (seville orange) or 1/2 cup lime juice plus 1/4 cup orange juice)
1/2 c vegetable stock (or broth)
1/2 tsp ground cumin
1/2 tsp ground oregano
1/2 tsp ground black pepper
salt to taste
3 Tbsp fresh cilantro chopped (or fresh parsley)

Steps:

  • 1. Heat oil in a saucepan over medium heat. Add the garlic slices and cook for 2-4 minutes, or until fragrant. Watch carefully and do not let the garlic burn.
  • 2. Remove pan from heat and stir in the juice, stock, cumin, oregano, and pepper. Bring the sauce to boil over medium-high heat; then reduce the heat to medium and simmer approximately 3 minutes or until the sauce has mellowed. Season to taste with salt.
  • 3. Remove sauce from heat and allow it to come to room temperature. Once cooled, add the cilantro or parsley.
  • 4. Sauce can be refrigerated in a glass bottle for up to one week. Always shake before using.
