Moist Lemon Cake image

I like to make this the night before so that the cake has plenty of time to soak up all the glaze- it becomes VERY MOIST and delicious.

CAKE
1 package white cake mix
1 package instant lemon pudding mix
3 eggs
3/4 c vegetable oil
1 c sprite
GLAZE
1/3 c fresh lemon juice
2 1/2 c confectioners' sugar
zest of one lemon (optional)

Steps:

  • 1. Preheat oven to 350. Grease a 9 x 13 pan.
  • 2. In a large bowl combine cake mix, pudding mix, oil, and eggs. Beat on low for 30 seconds. Beat on medium for another minute. Slowly add Sprite and beat until just blended.
  • 3. Pour batter into pan and bake for 35 to 40 minutes, or until toothpick inserted into the center of the cake comes out clean.
  • 4. While cake is baking make the glaze. In a small bowl combine the lemon zest, lemon juice, and powdered sugar. Stir until sugar is dissolved.
  • 5. Pour glaze over warm cake.
