- Beat 1/2 cup butter, sugar, and brown sugar in large bowl with electric mixer at medium speed until light and fluffy. Add melted chocolate, egg, and vanilla; beat until well blended. Whisk flour, cocoa, and 1/4 teaspoon salt in small bowl. Gradually add to butter mixture, beating well after each addition. Shape dough into 16 inch log. Wrap and refrigerate 1 hour or until firm.
- Preheat oven to 400. Lightly grease or line cookie sheets with parchment paper. Cut log into 1/4 inch slices. Place 2 inches apart on prepared cookie sheets. Bake 10 minutes or until set. Cool on cookie sheets 5 minutes. Remove to wire racks; cool completely.
- Beat powdered sugar, remaining 1/2 cup butter, and 1/4 teaspoon salt in large bowl with electric mixer at medium speed until well blended. Add mint extract and food coloring; beat until well blended. Beat in milk, 1 tablespoon at a time, until light and fluffy. Spread filling on flat sides of half of cookies; top with remaining cookies.
