MINT AND FETA PESTO image

Number Of Ingredients 4

80g (2 3/4oz) mint, leaves picked
100g (3 1/2oz) feta cheese, crumbled
1T lemon juice
125ml (4fl oz/1/2c) extra virgin olive oil

Steps:

  • Put mint, feta and lemon juice in a food processor and blend until roughly chopped. With motor running, add olive oil in a thin stream and blend until incorporated. Season.
