Mini Ham Loaves image

Number Of Ingredients 14

3 pounds ground ham
2 pounds lean ground pork
4 - 5 eggs
2 cups crushed cornflakes
2 cups milk

Raisin Sauce:
2 tablespoons cornstarch
1/4 cup cold water
1 (6-ounce) can frozen orange juice concentrate, thawed
1 1/2 cups brown sugar
1 tablespoon dry mustard
2 tablespoons cider vinegar
1 1/2 cups golden raisins

Steps:

  • Mix ham, pork, eggs, cornflake crumbs, and milk; shape into small loaves, using about a rounded 1/2 cup meat mixture. Bake, uncovered, on a greased jellyroll pan at 325° for 30 minutes. Meanwhile, prepare sauce. Raisin Sauce: Dissolve cornstarch in cold water. Combine with remaining sauce ingredients in a saucepan. Bring to a boil and cook several minutes. Baste ham loaves with Raisin Sauce; reduce heat to 300° and continue baking for an additional 30 minutes. (For a family-size ham loaf, use half of ingredients. Bake at 300° for 1 1/2-2 hours.) You can prepare ahead and bake just before serving.
