Mimi's Tomato Soup image

this comes from my maternal grandmother. I think it came from her "Inglenook"Cookbook.

Number Of Ingredients 6

2 pound(s) fresh tomatoes
2 teaspoon(s) baking powder
2 tablespoon(s) butter
2 cup(s) whole milk
2 tablespoon(s) flour
pinch(es) salt and pepper

Steps:

  • clean, core and dice whole tomatoes, mash with potato masher, sprinkle with baking soda, cook on low until tomatoes are soft app. 10 min.Press tomatoes through a sieve.
  • make a roux with flour and milk. wisk until smooth. Add slowly to the tomatoes. cook over low heat until it begins to thicken.Be careful, and stir often so it doesn't scorch.
  • add butter and season with salt & pepper to taste, toward the end of cooking.
