Mimi's Mexican Meatloaf image

This recipe caught my attention because it had cocoa and cinnamon as ingredients. This has turned out to be a family favorite. Definitely not your everyday meatloaf.

1 1/2 lb meatloaf meat mix(beef, pork and veal) or just all ground beef
1/4 c plain breadcrumbs, dried
1 large egg, well beaten
1 c salsa, we use hot picante brand
4 1/2 oz chopped green chiles
2 Tbsp brown sugar, packed
1 Tbsp chopped fresh cilantro
1 Tbsp chopped parsley, or additional cilantro
1 tsp cocoa powder
1/2 tsp salt
1/4 tsp garlic powder
1/4 tsp cumin
1/4 tsp cinnamon
1/4 tsp chili powder
1 tsp lemon juice

Steps:

  • 1. Preheat oven to 350. In a large bowl combine meat, eggs, bread crumbs and mix well.
  • 2. In a medium bowl, combine remaining ingredients and mix well. Add 3/4 cup of salsa mixture to meat mixture and mix well. Put meat mixture into an ungreased 1 1/2 to 2 quart casserole or 9 x 5 loaf pan. Shape mixture into a loaf shape.
  • 3. Bake at 350 for 50 minutes. Remove from oven and spoon remaining sauce over top of meatloaf. Return to oven and bake an additional 20-30 minutes or until thoroughly cooked and center reads 160 degrees on an instant-read thermometer.
