Another recipe that is found all over the web. This is just the way I make them. My son doesn't like coconut so I told him all the ingredients, except for the coconut. 1 c sugar
1 c brown sugar, packed
1 c butter, softened
2 large eggs, beaten
1 tsp vanilla
2 c flour
1 tsp soda
1/2 tsp baking powder
1/2 tsp salt
2 c oatmeal
1 c coconut, sweetened
2 c crisped rice cereal
1 c chopped pecans (optional but really good in the cookies)

Steps:

  • 1. Preheat oven to 350. Cream sugar, brown sugar, butter and vanilla. Add eggs 1 at a time, mixing well between each.
  • 2. Combine flour, soda, baking powder and salt. Stir into sugar, butter and egg mixture. Then, by hand, stir in oatmeal, coconut, rice cereal and pecans.
  • 3. Drop by tablespoonsful onto greased cookie sheets and bake for 10 minutes. Remove and let set a minute then remove to wire rack to cool. Repeat until all dough is cooked. I usually re-spray the cookie sheet between batches. The dough can get really sticky.
