MILLET CHEESE SOUFFLE image

Yield 4 servings

Number Of Ingredients 8

1/2 c millet
1 1/2 c water
1/2 t salt
1/2 t dill
3 oz grated swiss cheese
2 egg yolks
3 egg whites
1 T chopped parsley

Steps:

  • Combine millet, water, salt, and dill in a saucepan. Cover and bring to a boil. Lower heat and simmer very gently about 20 minutes until all the liquid is absorbed. Remove from heat and let stand 10 minutes. Add grated cheese and egg yolks and blend thoroughly. Beat egg whites until stiff but not dry. Fold half the egg whites into millet mixture until thoroughly blended. Fold remaining egg whites in until just blended, being careful not to over mix. Turn into a greased 9" pie plate or 1 1/2 qt casserole. Bake in a preheated 350 oven for 30 minutes or until puffed and browned. Sprinkle with chopped parsley and serve immediately.
