MIKE'S CHILI image

Number Of Ingredients 15

2 lbs beef cubes
1/4 c olive oil
salt as needed
pepper as needed
1/2 c red wine
3 tbs Chili powder
1 17 g Taco seasoning mix
1 can/bottle beer
28 oz canned Roma tomato
1/2 c tomato sauce
1 cup beef broth
1 large onion (chopped)
1 clove garlic (pressed)
1 19 oz can mixed beans (rinsed)
1 14 oz can pork and beans made with molasses

Steps:

  • Cut up beef cubes into smaller pieces, no smaller than the largest bean in this recipe. Brown the beef in olive oil, add salt and pepper, red wine and saute for a couple of minutes. Add canned tomatoes, tomato sauce, beer, beef broth, taco seasoning mix and chili powder. Bring to a boil then reduce heat, cover and simmer for 60 minutes. Taste sauce to determine if more chili powder is required. Add more powder as desired. Add onion and garlic, simmer for an additional 20 minutes. Allow for sauce reduction if there appears to be too much liquid. Add in mixed beans and pork and beans. Cook until these beans are heated. Do not over cook or you will end up with mush.
