Steps:
- Mix the peanuts, sugar, corn syrup and salt in a microwave safe bowl. Cook on high for 4-6 minutes, stir well, then cook for another 4-6 minutes. Stir in butter and vanilla, then microwave another 2-4 minutes. Remove, add baking soda and stir quickly until light and foamy. Immediately pour mixture onto lightly greased baking sheet in thin layer. Allow brittle to cool. Break into small pieces and store in an airtight container.
