Microwave Peanut Brittle image

My sister-in-law gave me this receipe a couple of years ago. We all love peanut brittle and it is pretty easy to make. Just read the receipe good and get everything ready to go. Once you get started you won't have time to get the next ingredient measured.

Number Of Ingredients 6

1 c granulated sugar
1 1/2 c light karo syrup
1 c heaping cup of peanuts
1 tsp butter
1 tsp vanilla extract
1 tsp baking soda

Steps:

  • 1. 1. You will need a heavy glass bowl. Mine is a pyrex glass bowl with a pour spout. You will also need pot holders this bowl will be too hot to handle. Stir these first 3 ingredients together in a glass bowl. Use a wooden spoon to stir.
  • 2. 2. Place into microwave for 3 1/2 minutes. This should be bubbly if not play with the time. Take out of the microwave. Stir the peanuts, sugar and syrup. Place back in the microwave for 2 1/2 minutes.
  • 3. 3. ADD 1 tsp butter, 1 tsp vanilla Stir into the mixture in the bowl. Back in the microwave for 1 minute ADD 1 tsp Baking Soda. This will make the brittle foamy. Pour into greased (PAM)Cookie sheet. Can use a cookie sheet lined with foil sprayed with PAM. Spread out with the wooden spoon. Let cool completely. Break apart. Keep in airtight containers.
