Mexican Rice image

I make this rice with every Mexican dish I make! Very flavorful you could eat this by itself.

Number Of Ingredients 10

1 Tbsp butter
1 Tbsp olive oil
1 onion, chopped
1 c of rice
2 clove garlic, chopped
1 can(s) green chiles
1 Tbsp tomato paste
1 can(s) tomatoes, diced
2 c chicken broth
salt and pepper

Steps:

  • 1. Heat oil and butter in a large skillet. Add onions and rice.
  • 2. Fry rice until light brown.
  • 3. Add garlic and chiles and cook for 30 seconds.
  • 4. Pour rice in a pot and add the rest of the ingredients. Bring to a boil, cover pot and turn the temperature down to low. Cook for 25 min.
  • 5. Fluff and season rice with salt and pepper before serving.
