MEXICAN PINWHEELS image

Yield 12 pinwheels

Number Of Ingredients 10

1 lb ground beef
1 cup water
1 1-1/4 ounce package taco seasoning mix
2 cups (8 ounces) shredded Cheddar cheese
2 cups flour
4 tsp baking powder
1/2 tsp salt
1/4 cup shortening
1 cup undiluted evaporated milk
2 7-oz cans green chile salsa

Steps:

  • Brown ground beef in large saucepan. Drain off excess fat. Add water and taco seasoning mix. Heat to boiling. Boil gently, uncovered, 20-30 minutes, or until liquid has evaporated. Remove from heat. Stir in 1 cup cheese. Combine flour, baking powder, and salt in medium bowl. Cut in shortening. Stir in evaporated milk. Knead dough 10 times on a lightly floured board. Rol out to 18 x 10=inch rectangle. Spted meat filling over dough leaving a 1-inch borderr. Roll up tightly, starting at long side. Pinch ends to seal. Cut into 1-1/2 inch slices. Plac cut side up in 12 x 7-1/2 x 2 inch baking dish. Bake in moderate oven (350 degrees) about 25 minutes. Sprinkle remaining 1 cup cheese over pinwheels. Bake 2 minutes longer to melt cheese. Serve with salsa and choice of toppings. Topping Choices: Sliced ripe olives, chopped tomates, onion green pepper and sour cream.
