Mexican Meatloaf image

Nothing better than meatloaf and Mexican food combined into one amazing recipe !

MAIN INGREDIENTS:
2 lb ground beef
1 large egg
1 1/2 c crush tortilla chips or nacho cheese doritos
1 1/2 c mexican blend shredded cheese
1/2 c chopped onion
1 large chopped tomato or can of petite diced tomatos
1/2 c taco sauce
1 c sour cream
1/2 c chopped mild banana peppers
1 pkg taco seasoning mix
OPTIONAL INGREDIENTS
shredded lettuce
guacamole
sour cream
hot sauce or taco sauce
olives
jalapeno peppers

Steps:

  • 1. Start off by rounding up all the needed ingredients for the recipe and collect a medium-large bowl for mixing. This includes chopping/dicing the ingredients that call for this step. Set your oven to 350 degrees. Once that is achieved, start off by adding all of the ingredients into your bowl BESIDE THE GROUND BEEF. Mix all the ingredients well.
  • 2. Prepare your mix by adding the uncooked beef and mixing well. Make sure all the ingredients are even through out the beef. Once achieved, prepare your baking dish-cake pan (which ever you desire) and add the entire mixture into the dish.
  • 3. An optional step is to evenly pour your desired amount of taco sauce on top of the mixture and speading it evenly among the meatloaf. Once finished placing the meatloaf in the pan/dish cover it with foil and bake for a minimum of 45 minutes. Once time is up, check the loaf for doneness. If under cooked, place back into over for an additional 15-25 minutes.
