Mexican Garbage Can or Mexican Lasagna image

A friend introduced me to this recipe about 20 years ago. Now I make it for pot lucks at work and it's always a big hit!

Number Of Ingredients 10

1 pound(s) ground beef, browned & drained
1 package(s) flour tortillas or corn tortillas, your choice
1 can(s) green beans, drained and chopped
1 can(s) corn, drained
1 can(s) chopped green chiles
1 large can refried beans
1 jar(s) salsa, (we like chunky and hot)
1 or 2 - jalapenos, fresh & chopped (optional)
1 package(s) taco seasoning mix
1 package(s) shredded cheddar cheese

Steps:

  • To the browned ground beef add the chopped green beans, corn, green chilies, refried beans, salsa,jalapenos and taco seasoning. Mix together until well blended.
  • Spray crock pot with Pam, put some of the beef mixture on bottom, make a layer with the tortillas, another layer of meat mixture, and sprinkle with cheddar cheese (we like it cheesy), repeat layering until crock pot is full, ending with cheese.
  • Cook on low for 4-5 hours. Serve with chopped tomatoes, sour cream, shredded lettuce, and more salsa if you want. We also like to add Crunchy Tortilla chips as a side.
