Mexican Corn on the Cob image

My hubby loves corn on the Cob! And loves spice, so I put this amazing side dish together and he loved it! Going to be a new house favorite ! Enjoy!

Number Of Ingredients 7

6 large ears of corn
4 tablespoon(s) chili powder
2-3 large limes
pinch(es) salt
pinch(es) pepper
1/4 cup(s) chopped cilantro leaves
1/4 cup(s) fresh queso fresco cheese

Steps:

  • Just before cooking, husk the corn, pull off the silky threads, and cut out any blemishes with a pointed knife. Drop the corn into a large pot filled with boiling salted water. Cover the pot and let the water return to a boil again, then turn off the heat and keep the pot covered. After about 5 minutes, remove enough ears for a first serving. You can keep the remaining corn warm in the water for another 10 minutes without its becoming tough.
  • Place on a paper towel. Squeeze the juice of the limes out on top of the corn and Rub down with butter and sprinkle chili powder over butter.
  • Then salt and pepper Add cilantro and cheese
  • Serve straight away!! And Enjoy! My hubby even put hot sauce on it too! (and hes a Ginger) hehehehe :) My kids loved this and they are 9,7 and 17 months... EnjoY!
