Mexican Chicken Casserole. image

If you don't want to use the whole chicken use 4 chicken breasts.

1 bag of fritos
1 whole chicken, boiled, deboned and shredded
1 can(s) cream of mushroom soup
1 can(s) ro-tel
1/2 pkg velvetta

Steps:

  • 1. Preheat oven to 350
  • 2. Mix the chicken with cream of mushroom soup, and rotel
  • 3. Lightly smash into big pieces 1/2 the bag of fritos
  • 4. Add to mixture. Put mixture into a 13x9 casserole/cake pan.
  • 5. Layer with the remaining corn chips.
  • 6. Top with thinly sliced velvetta.
  • 7. Cover with aluminum foil except the last five minutes.
