Steps:
- Heat oil in skillet. Remove from heat and add flour. Return to heat and cook, stirring, until the roux becomes med. brown in color. Slowly whisk in stock, and bring to a boil, stirring constantly, and simmer for 45 minutes. Correct seasoning. Make one cup sauce. Transfer sauce to a 2 qt. saucepan and bring back to a quick simmer. Whisk in softened butter and Worecestershire sauce and continue to whisk until butter is absorbed. Add lemon juice and parsley. Whisk again briefly and remove from heat. Use the sauce within 45 minutes.
