12 cups mesclun or 12 cups other mixed salad greens
3 tablespoons olive oil
2 tablespoons orange juice
2 tablespoons balsamic vinegar
8 thin slices red onions, separated into rings
2 cups orange sections
2/3 cup kalamata olive (or mixed olives)
1/8 teaspoon salt
1/8 teaspoon black pepper

Steps:

  • Place greens in a large salad bowl.
  • For the dressing, combine the olive oil, orange juice and vinegar. Pour over greens and toss gently to mix.
  • Divide mixture among salad plates. Top with onion rings, orange sections and olives. Season to taste with salt and pepper.
