Mertzie's Chili image

So many chili recipes out there. I don't like mine extra, extra hot. I've never used a recipe, but my son has been asking me to write down how I make some of his favorite dishes, so today I did just that. We top ours with cheese, sour cream & scallions. I still love to crumble Ritz crackers in my chili, just like I did when I was little! :)

Number Of Ingredients 21

2 pound(s) ground meat (i like ground sirloin)
- worcestershire sauce
1-2 large onions, chopped
2-3 large green peppers, chopped
2 - stalks celery, diced (i use leaves too)
- garlic powder, onion powder, montreal steak seasoning, salt, pepper
4 tablespoon(s) chili powder
1 tablespoon(s) cumin
1 tablespoon(s) minced garlic
3-4 - 14 oz. cans, tomatoes with green chiles (i use rotel)
1 - 28 oz. can whole tomatoes
1 - 28 oz. can crushed tomatoes
2 - hungarian banana peppers
1 - container knorr's beef stock
1 teaspoon(s) cayenne pepper & crushed red pepper flakes (each)
4 - cans beans (i use 2 black beans, 1 light red kidney, 1 dark red kidney)
1/2 can(s) beer
1 tablespoon(s) sweet chili sauce (i use frank's red hot)
1 teaspoon(s) cilantro, dried
1 can(s) tomato paste
- chipotle chili powder, ancho chili powder, to taste (i use about 1 tbs or more of each)

Steps:

  • Brown ground meat very well. I add some salt & pepper as it cooking. Drain, if needed. Add garlic & onion powder, Montreal seasoning, and generous amount of worcestershire. Continue cooking.
  • Add onion, green & banana peppers, & celery, and stir well.
  • I add everything else except the beans & cilantro & cook on low-medium for about 1 hour. (I add about 1 TBS of sugar on top of the canned tomatoes). Then, I add the beans, cilantro, more salt if needed or whatever others spices & we're ready to chow! If you want more heat, add jalapenos or hot sauce.
