Melon with Minted Lime Dip image

For a refreshing summer side dish for any meal, our Test Kitchen recommends these marinated melon balls with a cool, creamy dip. You can also serve this fruity treat as a light dessert.

Yield 8 cups fruit (1 cup dip).

Number Of Ingredients 12

1/4 cup sugar
1/4 cup water
6 tablespoons lime juice
2 tablespoons minced fresh mint
2 teaspoons grated lime zest
2 tablespoons minced fresh gingerroot
8 cups melon balls or cubes
MINTED LIME DIP:
1 cup sour cream
2 tablespoons sugar
1 tablespoon lime juice
2 teaspoons grated lime zest

Steps:

  • In a large bowl, combine the sugar, water, lime juice, mint, lime zest and ginger. Add melon balls. Cover and refrigerate for 1-6 hours. , Thread melon onto wooden skewers or toothpicks. In a small bowl, combine dip ingredients. Serve with melon.
