Mediterranean Vegie Fritters image

Number Of Ingredients 8

2 tablespoons chutney or 2 tablespoons relish
1/2 cup parsley, chopped finely
300 g kumara, grated
1 zucchini, grated
2/3 cup plain flour
1 egg, lightly beaten
salt and pepper
vegetable oil, to fry

Steps:

  • Mix all ingredients but oil in a bowl.
  • Heat oil in large non stick fry pan.
  • Spoon tablespoons of mixture into pan.
  • Cook 2 -3 minutes each side till cooked and golden.
  • Drain on paper towel.
  • Serve with extra chutney.
