MEDITERRANEAN CHICKEN WITH FETA CHEESE image

Number Of Ingredients 11

8 oz orzo pasta
1 lb boneless, skinless chicken breasts cut into bite-sized pieces
2 tsp olive oil
1 large onion chopped
2 tsp bottled minced garlic
1/2 tsp dried oregano
1/2 tsp dried basil
1/2 cup dry white wine
1 14-oz can chopped tomatoes with garlic and oregano
4 oz feta cheese
1/2 cup chopped fresh parsley leaves (optional)

Steps:

  • 1. Boil water and cook orzo until tender. Drain and set aside. 2. Heat oil over medium heat in deep 12-inch skillet. Add chopped onion. Stir fry. 3. Add chicken. Raise heat to medium-high. Add garlic, oregano, and basil. Cook until chicken is no longer pink. 4. Stir in wine and cook 1 min. 5. Add tomatoes with their juice and the feta cheese. Add parsley. Stir and cook 1 min. 6. Serve over hot orzo.
