Steps:
- Combine tomato, cucumber, parsley, mint, lemon juice, salt and pepper. Wrap pita rounds in foil and heat at 350 for 15 min till warm. On a 12 inch platter, spread hummus, arrange spinach on top leaving a 1 inch border. Spoon tapenade over spinach leaving a 1 in border. Drain tomato and spread tyhis mixture over leaving the same border. Sprinkle with feta and topwith red peppers, green onion, and olives. Garnish with mint. Cut pitas into wedges and serve.
