I have been making this dip for the last 20 years. My kids actually get upset with me if I don't make it for every event or gathering. Beware though, it is very addicting. I usually have to make a double or even triple batch, depending on the size of the gathering.

- Heat a crock-pot to "Hi." Add the can of tomatoes. Cube Velveeta cheese and add it to the crock-pot. While that is heating, brown the sausage and make sure that the crumbles are small. Drain the sausage and add it to the crock pot. Stir the mixture frequently until it is melted and mixed together. At this point turn the crock-pot to warm or low, and enjoy the dip with tortilla chips or corn chips. The spice and heat in the sausage and the tomatoes that you use will determine the heat of the dip. Since my dip is usually served to children as well as adults, I usually use mild or medium sausage and tomatoes. Also, I have tried to make this dip with cheese other that Velveeta, and it does affect the flavor...spend the extra money and use the Velveeta. I also buy Tostito's Scoops and Frito's Scoops some people like tortilla chips while others like corn chips, and the plus to it is that they hold lots of the cheese.
