- Preheat oven 350 degrees. Place olive oil in a saucepan and saute onions, celery and garlic until softened. Remove from heat and let cool a bit. Mix milk and Panko bread crumbs together in a large bowl.
- Add all the ingredients for the meatloaf together and mix well with your hands. Line a large baking sheet with parchment paper and shape a large loaf of meatloaf. Bake for 45 minutes to an hour depending on how thick the meatloaf is.
- Meanwhile make the garlic sauce. Combine oil and garlic in a small pan. Bring to a boil then lower the temp to lowest setting and simmer for 15 minutes. Don't burn the garlic. Remove the garlic cloves and reserve the oil for other uses.
- Add chicken stock and butter to a sauce pan. Add the cloves of garlic and bring to a boil over high heat. Lower heat to low medium and with an immersion blender blend the garlic cloves until smooth.
- Simmer 35 to 40 minutes to thicken the sauce. Season with salt and pepper. Serve drizzled over meatloaf and garnish with parsley if desired
