MEATLOAF WITH BROWN SUGAR-KETCHUP GLAZE- BEST RECIPES image

Glaze:
1/2 C ketchup
4 T brown sugar
4 t cider or white vinegar
Meatloaf:
2 t vegetable oil
1 medium onion, chopped
2 garlic cloves, minced
2 lg eggs
1/2 t dried thyme
1 t salt
1/2 t grd black pepper
2 t Dijon
2 t Worcestershire
1/4 t tabasco
1/2 C whole milk or plain yogurt
2 lbs meatloaf mix
2/3 C crushed saltines OR quick oatmeal OR 1 1/3 C bread crumbs
1/3 C parsley, minced
6-8 slices bacon

Steps:

  • 1. For glaze, mix all ingredients in a small saucepan and set aside. 2. Heat oven to 350. 3. Saute onion and garlic in oil about 10 min then set aside to cool. 4. Mix eggs through yogurt together. Add to meat, crackers, and parsley. 5. Blend with a fork. 6. Place on foil-lined pan and shape into loaf. Brush with half of glaze and bacon. 7. Bake until internal temp. is 160- about 1 1/2 hr. Cool 20 min. before serving. 8. Simmer glaze until thickened slightly.
