Meatloaf - Gluten Free image

I decided to modify my regular meatloaf recipe into a gluten free recipe for my son-in-law, who can't have gluten in his diet. I wasn't sure how this was going to come out, but I think my hubby liked it better than my usual recipe. It really was delicious. I hope you enjoy it!

Number Of Ingredients 12

1 lb hamburger
1/2 lb neese's brand sausage (or other gluten-free brand)
1 medium onion, chopped
1 large egg, lightly beaten
1 tsp salt
1/2 tsp black pepper (or to taste)
1 can(s) tomato paste, 6 ounce size
1 1/2 c gluten free oatmeal, uncooked
TOPPING
4 Tbsp heinz ketchup
2 Tbsp yellow mustard
2 Tbsp brown sugar

Steps:

  • 1. Preheat oven to 375 degrees. Spray a loaf pan or 9 x 13 baking dish with cooking spray, set aside.
  • 2. Mix together hamburger, sausage, egg, salt, pepper, tomato paste, onion and oatmeal. When thoroughly mixed, put into prepared pan. If using a baking dish, shape into a loaf.
  • 3. Spread topping evenly over the loaf (recipe to follow). Place in oven and bake for one hour. Remove from oven and let stand for about 10 minutes before slicing.
  • 4. TOPPING: Mix together ketchup, mustard and brown sugar. Spread evenly over meatloaf.
