Meat Lovers Breakfast Burrito image

This made a lot of meat filling. The egg/meat mixture made approximately 6 medium sized burritos. The leftover meat mixture I'll make a into a quiche!

Number Of Ingredients 12

1 pound(s) italian sausage (i like bob evans)
6 slice(s) canadian bacon, cut into bite sized pieces
6 slice(s) bacon, cooked & crumbled
2 1/2 ounce(s) pepperoni, quartered into bite sized pieces
8 large eggs
1 tablespoon(s) red pepper flakes
1 tablespoon(s) my seasoning (i use equal amounts garlic powder, onion powder, salt & pepper)
1 cup(s) cheddar cheese, shredded
1/2 large green pepper, chopped
1/4 large onion, chopped
- salsa, sour cream, avocado, black olives, taco sauce
- whole wheat tortillas

Steps:

  • To skillet, add sausage, canadian bacon, onions & peppers. Cook together. Once sausage is done, throw in bacon & pepperoni. Let cook until sausage is done and all is heated thoroughly. Add in red pepper flakes & seasoning.
  • In another skillet, spray with Pam and scramble eggs with cheese and cook until almost done. Spoon (with a slotted spoon to eliminate some of the grease) as much of the meat mixture as you like into the egg mixture. Once well combined, spoon into tortillas. Top with salsa, avocado, etc. or whatever you enjoy on your burrito! Enjoy!
