Meat Lovers Breakfast Burrito image

This made a lot of meat filling. The egg/meat mixture made approximately 6 medium sized burritos. I had meat filling (meat & veggies) left over that I'll make a quiche with this week.

Number Of Ingredients 12

1 pound(s) italian sausage (i like jimmy dean)
6 slice(s) canadian bacon, cut into bite sized pieces
6 slice(s) cooked bacon, crumbled or cut up
2 1/2 ounce(s) pepperoni, quartered into bite sized pieces
8 large eggs
1 tablespoon(s) red pepper flakes
1 tablespoon(s) my seasoning (i use equal amts. garlic powder, onion powder, salt & pepper)
1 cup(s) shredded cheddar cheese
1/2 large green pepper, chopped
1/4 large onion, chopped
- salsa, sour cream, avocado, black olives, taco sauce
- whole wheat tortillas

Steps:

  • To skillet add sausage, canadian bacon, onions & green peppers, cook together. Once sausage is done, throw in bacon and pepperoni. Let cook til sausage is done and all is heated thoroughly. Add in red pepper flakes & seasoning.
  • In another skillet, spray with pam and scramble 8 eggs along with the cheddar cheese and cook until almost done. Spoon in (with a slotted spoon to eliminate some of the grease) as much of the meat mixture as you like. Once well combined, spoon onto heated whole wheat tortillas. Add salsa, avocado, sour cream or whatever you enjoy on your burrito! Enjoy!
