Meat Loaf Ole' image

Put a twist on your meatloaf while adding these Tex-Mex ingredients.

2 eggs
1/2 cup(s) black bean salsa or regular bottled salsa
1 cup(s) corn chips, finely crushed
1 1/4 pound(s) lean ground beef
1/4 cup(s) black bean salsa, bottled salsa or tomato sauce
1/3 cup(s) corn chips, coarsely chopped
dairy sour cream
sliced green onions
shredded cheddar cheese

Steps:

  • Preheat oven to 350 degrees F.
  • In a large bowl, beat the eggs and add 1/2 cup salsa and the finely crushed corn chips. Add ground beef; mix well. Pat mixture into a loaf pan.
  • Bake meatloaf in a preheated oven for 55-60 minutes or until 160 degrees. Drain fat and cool for approx. 10 minutes.
  • Transfer meatloaf to a platter. Spread the remaining 1/4 cup salsa over meat loaf and top with cheddar cheese if desired. Sprinkle top with coarsely chopped corn chips and serve with sour cream, if desired.
