Maw Maw's Pumpkin Pie image

This is the best pumpkin pie I have ever tasted. It is rich, delicious and addictive! Serve with a dollop of fresh whipped cream or a scoop of vanilla ice cream to send it right over the top!

8 oz cream cheese, room temperature
2 c canned pumpkin pie mix
1/2 stick unsalted butter, melted
1 c brown sugar, lightly packed
1 c evaporated milk
1 egg
2 egg yolks
1 tsp vanilla extract
1/2 tsp cinnamon, ground
1/4 tsp freshly grated nutmeg
1/4 tsp ginger, ground
2 store bought deep dish pie crusts

Steps:

  • 1. Preheat oven to 350 degrees Fahrenheit.
  • 2. With a hand mixer cream together cream cheese, brown sugar, spices, vanilla extract and melted butter.
  • 3. Add 1 cup evaporated milk and 2 cups of canned pumpkin, mix thoroughly.
  • 4. In a separate bowl whisk one whole egg and two egg yolks, then add to pumpkin mixture and beat thoroughly.
  • 5. Scrape down the sides of the bowl with a rubber spatula and make sure that all ingredients are incorporated.
  • 6. Divide mixture evenly between two deep dish pie crusts. I use a ladle and fill the shells one ladle at a time to make sure that they are perfectly even.
  • 7. Place pies in the oven and bake for 50 minutes, then allow pies to cool completely on the counter and then store in the refrigerator.
