This is the best pumpkin pie I have ever tasted. It is rich, delicious and addictive! Serve with a dollop of fresh whipped cream or a scoop of vanilla ice cream to send it right over the top!

- 1. Preheat oven to 350 degrees Fahrenheit.
- 2. With a hand mixer cream together cream cheese, brown sugar, spices, vanilla extract and melted butter.
- 3. Add 1 cup evaporated milk and 2 cups of canned pumpkin, mix thoroughly.
- 4. In a separate bowl whisk one whole egg and two egg yolks, then add to pumpkin mixture and beat thoroughly.
- 5. Scrape down the sides of the bowl with a rubber spatula and make sure that all ingredients are incorporated.
- 6. Divide mixture evenly between two deep dish pie crusts. I use a ladle and fill the shells one ladle at a time to make sure that they are perfectly even.
- 7. Place pies in the oven and bake for 50 minutes, then allow pies to cool completely on the counter and then store in the refrigerator.
