White Bean Bruschetta image

Number Of Ingredients 12

FOR THE TOPPING:
2 tablespoons extra-virgin olive oil
1/4 cup finely chopped yellow onion
1/4 teaspoon , crushed red pepper flake
2 teaspoons minced garlic
2 teaspoons finely chopped fresh sage
1 (15-ounce) can navy beans or cannellini beans, drained
2 teaspoons red wine vinegar
kosher salt
freshly ground black pepper
1 loaf rustic Italian bread, cut into 1/2-inch slices
2 tablespoons finely chopped fresh Italian parsley

Steps:

  • TO MAKE THE TOPPING: In a medium sauté pan over medium heat, warm the olive oil. Add the onion and red pepper flakes, and cook, stirring occasionally, until the onion is tender, 4 to 5 minutes. Add the garlic and sage and cook for 1 minute more, stirring occasionally. Add the beans and vinegar and cook until the mixture comes to a simmer. Transfer to a food processor and process until smooth. Season with salt and pepper.Grill the bread slices over Direct Medium heat until toasted, 2 to 3 minutes, turning once halfway through grilling time. Transfer to a platter.
