MARINATED POTATO SALAD image

Number Of Ingredients 19

1 lb new potatoes par boiled cut in bite size chunks
0.5 head cauliflower florets steamed
1 pt cherry tomatoes halved
2 red or yellow bell peppers chunked
1 seedless cuke sliced 1/4 "
3/4 lb mushroom caps quartered
2 red onions thick sliced and quartered
2 tbl black olives
1 cup cannellini cooked beans
Marinade
3 tbl sherry or white wine vinegar
Juice from 1/2 large lemon
1.5 tbl Dijon
1 clove garlic minced
3 tbl nonfat yogurt
2tbl olive oil
1/4 cup chopped herbs (basil, parsley, dill n chives
1/4 tsp dried tarragon
Salt n pepper to taste

Steps:

  • Toss veggies in bowl. Mix vinegar, lemon, mustard n garlic. Whisk yogurt n oil. Stir in 2 tbl herbs, tarragon, salt n pepper to taste cover n fridge at least 1 hour. Toss veggies with remaining herbs before serving.
