200 g button mushrooms, quartered
250 g swiss brown mushrooms, sliced
2 tablespoons basil leaves, torn roughly
2 garlic cloves, crushed
2 tablespoons balsamic vinegar
2 tablespoons reduced salt soy sauce
2 teaspoons honey
2 tablespoons extra virgin olive oil
4 iceberg lettuce cups

Steps:

  • Combine mushrooms in a ceramic bowl.
  • Combine basil, garlic, vinegar, soy sauce, honey and oil in a jug.
  • Pour over mushrooms, toss well, cover.
  • Set aside for 30 minutes.
  • Spoon mushroom mixture into lettuce cups.
  • Serve.
