MARINATED BEAN SALAD image

Number Of Ingredients 11

1 cup 1 lb. each: cut green beans, wax bean, garbanzo beans
2 cups kidney beans
1/2 medium-sized onion, thinly sliced
5 green onions, thinly sliced
1 cup radishes, thinly sliced
1 bell pepper, thinly sliced
3/4 cup vinegar
1/3 cup salad oil
1/4 cup sugar or artificial sweetener
1 1/4 tsp. salt
1 1/4 pepper - or to taste

Steps:

  • Drain beans well (Save bean liquids for soup); combine with all other vegetables in large bowl; toss lightly. Combine all other ingredients in blender jar. Blend until well mixed and pour over bean mixture. Refrigerate overnight. Stir a few times. May be drained and served on lettuce, individual servings, or salad bowl, or as is, with liquid.
