Margaritas image

From The America's Test Kitchen Cookbook. My friend made these for our "bunco" group recently and they were delicious. I like the fact that it is all natural. It's more work than the typical bottled mixes but well worth the time. For the smoothest and most affordable flavor, use a reposado (rested in wood) tequila made from 100 percent blue agave (aged 12 months or less).

1/2 cup fresh lime juice (4 limes)
1/2 cup fresh lemon juice (3 lemons)
4 teaspoons grated lime zest
4 teaspoons grated lemon zest
1/4 cup sugar
1 pinch salt
1 cup tequila
1 cup triple sec
1 cup crushed ice, plus extra for serving

Steps:

  • Combine the lime juice, lemon juice, lime zest, lemon zest, sugar and salt in a large liquid measuring cup. Cover tightly with plastic wrap and refrigerate until the flavors meld, about 2 hours.
  • Strain the juice mixture into a pitcher and stir in the tequila, Triple Sec and 1 cup of the crushed ice. Pour over additional crushed ice before serving.
  • To make ahead: The recipe can be prepared through step 1 and refrigerated, covered tightly with plastic wrap, for up to 2 days. The longer the mixture sits, the more it mellows, eventually losing any harsh acidity and tasting of pure citrus only.
