MANICOTTI WITH CHEESE FILLING
Ingredients
1 225 g. pkg. Manicotti (14 Pcs.)
2 Cups 500 ml. Ricotta cheese
1/2 Cup 125 ml. Mozzarella cheese
1/2 Cup 125 ml. Grated Parmesan cheese, divided
1 tbsp 15 ml. Chopped fresh Italian parsley
1 egg, beaten
1/2 tsp 2 ml. Each: salt, pepper and nutmeg
2 cans spaghetti sauce
2 Cups 500 ml. Water

Steps:

  • Cook manicotti according to package directions. In bowl, combine ricotta, mozzarella, and 1/3 cup (75 ml.) Parmesan cheeses. Add parsley, egg, salt, pepper and nutmeg; set aside. Combine sauce and water. Spread 1 1/2 cups (375 ml.) sauce mixture in each of two 13x9-inch (34x22 cm.) baking dishes. Fill manicotti with cheese mixture and place seven in single layer on sauce in each dish. Cover with remaining sauce and top each dish with 2 tbsp (25 ml.) Parmesan cheese. Bake, covered, at 350 degrees F (180 degrees C) for 50 minutes.
