I love making mango bread when mango season is upon us. Using very ripe, juicy mangoes will yield you a very moist and delicious bread. An added plus, this recipe doubles as a banana bread recipe...just substitute the mango with very ripe bananas. I've tried many banana bread recipes including those with sour cream but this...

Number Of Ingredients 12

2 c flour
2 tsp baking soda
1 tsp baking powder
2 tsp cinnamon
1/2 tsp salt
1 1/2 c sugar
1/2 c oil
1/2 c butter, melted
1/2 c walnuts, chopped
1 tsp vanilla extract
3 c very ripe mangoes mashed (or very ripe bananas)
3 eggs (room temperature)

Steps:

  • 1. Mix all dry ingredients first.
  • 2. Make a well in the center of the dry ingredients then pour all liquid ingredients.
  • 3. Blend together well. Bake at 350 degrees until toothpick inserted in center comes out clean, approximately 50 minutes. Do not overbake.
